OUTDOORS

There are no barns or cowsheds at El Capricho. Our oxen live in the open, exposed to the winds, to the intense cold of our winters and the extreme heat of our summers, feeding on the endless grasslands where they live. There are aromatic herbs in their diet; thyme, rosemary and lavender, which grow naturally on our farmland, and they also graze on grains and dried grasses from the León pastures, which in due time will bring special nuances to the meat. They are always out there, a part of nature. Exercise and resistance to the onslaught of the weather contribute to the quality of the meat in a way that could never be achieved through a sedentary life in a barn.
